A Kerala traditional sadhya will be incomplete without Kootu Curry. This delicious food is very easy to prepare.
Ingredients
For grinding
Grated coconut - 1/3 cup
Red chilli - 2
Cumin seeds /Jeera seeds -3/4 tsp
For the seasoning
Mustard - 1 tsp
Red chilli - 1
Curry leaves - few
Grated coconut - 1/4 cup (to be roasted)
Preparation Method
Soak Bengal gram for 15 minutes in warm water and pressure cook till soft. Now peel the skin and chop plantain and yam into medium size pieces. Then, grind coconut, red chili and cumin seeds coarsely and keep it aside.
Add turmeric powder, salt and chili powder to both plantain and yam and cook it in a pressure cooker until 2 whistles or soft. Then add the cooked Bengal gram and jaggery to the above. Add the grounded paste and boil till it thickens.
Now you heat a tsp of oil, add mustard seeds when it splutters, add red chili, curry leaves and pour this seasoning over the koottu curry. Fry the coconut till it becomes golden brown and add to the kootu curry.
